Description
Under supervision at the Marie H. Katzenbach School for the Deaf, assumes responsibility for the preparation and cooking of food in an institution kitchen serving generally in large quantities; Ensures that federal, state, and departmental requirements are met in the planning of menus and the preparation of food; and performs other related work as required.
Supervises food service workers in a large kitchen, including assigning employees to appropriate work assignments; Prepares and cooks food in large quantities; Operates steam cookers, stoves, ovens, ranges, and other cooking equipment; Checks food supplies, kitchen supplies, and kitchen laundry, and ensures that equipment is kept in a clean/sanitary condition; Prepares and assists in the organization of special functions, and other requests as needed; Ensures that menus are prepared and followed; and ensure food preservation, Hazard Analysis & Critical Control Point (HACCP), health codes, state, federal, and other necessary government agency requirements are met; Inventory all food and dry goods; Coordinates the completion of all daily food requests; Order food items to meet specific menu and dietary requirements; Maintains records and files as required by state, federal and HACCP guidelines.
Requirements
Experience
Three (3) years of experience as a cook which shall have involved the preparation of all kinds of food in large quantities in the kitchen of a club, hotel, hospital, restaurant, or institution, and which shall have included one (1) year of supervisory experience in a position embracing the responsibility for all phases of kitchen management.
Note: Catering experience in a delicatessen will be acceptable. Deli counter experience in a delicatessen will NOT be acceptable. Cooking experience in a fast-food establishment will NOT be acceptable.
License: Appointee will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.
Preferred Education/Experience
Familiarity with kitchen equipment and appliances, food safety and hygiene knowledge; Experience in menu planning and budgeting and cost-control skills.Special Note (MKSD)
Note: Ability to communicate in American Sign Language preferred, or a commitment to learn American Sign Language in two (2) years.Note: All final candidates must be fingerprinted and bear the $78.38 cost of the criminal history check in order to qualify for employment at the Marie H. Katzenbach School for the Deaf.
